The Japan-born GLOBAL-IST knives have been designed for Japanese food culture with the worldwide acclaimed GLOBAL series as its origin. The knives are the form of our philosophy - “The GLOBAL knives deliver the greatest pleasure, joy, and bond to you”. The lineups have an enough range for at-home chefs, who are fascinated in cooking.
The name “GLOBAL-IST” was chosen because we want the ‘creators’ of home-dining who empathize our philosophy, and express “GLOBAL-ism” on their dining table with the benefits of the great lineups of the GLOBAL-IST.

YOSHIKIN has succeeded in realizing better functionalities and sharpness in the GLOBAL-IST series to make it suitable for home-cooking as its main theme. The improvement can be seen in the sharpness, length, the design of the handles, and weight of the products, which we have endeavored to produce, out of the frame of usual cooking knives. The GLOBAL-IST series is designed for home chefs, who pursue authentic styles of cooking for cuisines from Asian to Western styles.
The GLOBAL-IST series has been originally designed for home cooking in Japan, which creates a variety of cuisines including Japanese, western and Chinese as well as different cooking methods. It is essential to use adequate cooking knives in order to make full use of the benefit of ingredients and precise preparations. Your cooking process such as cutting, chopping, peeling, and slicing becomes authentic with the lineup of the GLOBAL-IST series.
The GLOBAL-IST series realizes sharpness and sufficient durability* with its extremely smooth edge, which we have achieved by introducing fine-grade water stone and strop that are usually used for sharpening Traditional Japanese knives. This “Extra Edge” can create a smoother, more beautiful cut-surface of food ingredients. A knife sharpener for easy care is available when the knives become dull.

Utility Knife is the core product of the GLOBAL-IST series. Focusing on producing the highest level of comfortableness to use, we have pursued the ultimate balance in the design of the knife, which can be used to cut food ingredients in various ways from home dining to precise cut required in authentic cooking methods. The handle is designed for users to be able to change the position of their grip easily depending on a strength level. The straight line from the center to the heel of the edge and the adequate blade width of the knife have made it very suitable for fine chopping and stripe slicing of vegetables. Then the narrower blade width from the center towards the tip of the knife, which is slightly curved, allows you to smoothly cut meat and trim tendons, make slices with beautiful incision to various food. Moreover, by using the whole length of the curved blade, you can enjoy stripe slicing, dicing food in an extremely small size, and chopping in a very smooth manner. The slightly-long length of blade (19cm*) allows you to use it at a home kitchen more comfortably and to be able to cut various food ingredients.

The Small Utility Knife 15cm, a petit knife of the GLOBAL-IST series, has been designed from scratch to enhance the accuracy of preparation processes such as slicing and carving. The combination of its slim body and easy-to-grip handle enables you to use it in any cutting scenes flexibly. The 15 centimeter-long length of the blade*, which is comparably longer than other petit knives, allows you to have a full control to the tip of the knife without getting bothered by the length by placing an index finger onto its spine. The best feature of the IST-02 Small Utility Knife 15cm is its amazing versatility as you can dice food into an extremely small size, cut large-sized apples and grapefruits into half by utilizing its length. Japan has various types of breads in different shapes and hardness from baguette, loafs, sandwiches to snack bread. In attempt to produce quality, with which any bread can be cut/sliced with comfort, the bread knife of the GLOBAL-IST series was born, inheriting the smooth edge of traditional Japanese knives. Its 20 centimeter- length of the blade with a slender shape has minimized the resistance from the impact when cutting bread, while the durability and sharpness have been improved thanks to the shallow wave on the edge and conducting Uratori (grinding of a blade) from the other side. The gently curved line of the edge towards the tip allows you to cut through the hard crust at the bottom of bread that touches to a chopping board (an area with a burnt color). Yet this knife can cut soft bread without damaging it. This bread knife is very unique with great adaptability that can be used for any types of breads from hard to soft.
Japanese food culture has been developed with the blessing of the rich ocean that surrounds the country. The Deba knife of the GLOBAL-IST series was born to allow at-home chefs to re-discover the charms of traditional Japanese knives. The stability of the handle has been improved as it has become easier to grip, which enables you to take control to the knife even when using it with strengths such as chopping off the head of fish. The small blade of the knife is suitable to process seafood at home including horse mackerel, sea bream, chicken grunt, mackerel, and squid. Slicing fish into fillets has become so much easier and quick with this knife. The GLOBAL-IST series has both for right-handed and left-handed at the same price, which usually differs for traditional Japanese knives with its cutting edge on a different side.
Together with the IST-05 DEBA Knife 12cm, the YANAGIBA Knife 24cm of the GLOBAL-IST series has been designed for people to be able to re-discover the greatness of the traditional food culture of Japan. While the Deba knife is for cut fish into fillets, Yanagiba knife is to slice the raw meat of fish (sashimi) thinly.
